Chocolate cake, buttercream shortbread pecan filling, chocolate frosting, topped with pecans. Now that’s what I call a chocolate cake. Amiright? I blame my dad for my chocolate obsession. He was the one that gave me my first bite of chocolate (it was ice cream, I was an infant and it was magical) and the one who’s been enabling my chocolate addiction ever since. He loves chocolate. I love chocolate. There’s never such thing as too much. In fact, chocolate on chocolate is our favorite. So on Father’s Day I like to bake him a chocolate cake. This, my friends, is that cake.
This year’s Father’s Day cake was inspired by this Millionaires cake, which sounds amazing, but wayyyy too time consuming. So I made a few adjustments. I bought Walker shortbread cookies and mashed them up. I used this super easy caramel sauce recipe, leftover buttercream from this recipe and this chocolate chocolate cake recipe. Then I added some nuts because my dad is nuts. Also he really enjoys them. Then I put it all together... by totally and completely winging it. Yep. Sometimes there is no method to the madness. And by golly if you can believe it… the cake was amazing! Not convinced? Go on and try it!
