For those of you just tuning in, this week I’m celebrating Christmas with poms poms! Every day I’m sharing a new way to spread Christmas cheer with poms! First up, edible pom pom cookies! This cookie is a colorful twist on your typical holiday snowball. Ever stop to think about how a snowball resembles a pom pom? No? The proof is in the cookie, people. The only difference between these and snowballs is a little food coloring. Just add a few drops of dye to your coconut and rub it together with your fingertips until combined. It’s that easy. Put a few of these out on Christmas Eve and Santa won’t know what hit him. Snowball? No Santa. That’s a pom pom!
- 1 cup sweetened flaked coconut
- 1 cup all-purpose flour
- 1 1/4 cups confectioners' sugar
- Pinch of salt
- 6 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 4 teaspoons milk
- Assorted Food Dye
Place ½ cup of the coconut in a large bowl. Chop remaining coconut and set aside. Add flour, 1/4 cup of the confectioners' sugar, salt and mix. Add butter and vanilla. Using a pastry blender, blend until dough comes together. Heat oven to 350 degrees. Roll dough into 1-inch balls. Place dough balls 1 inch apart on an ungreased baking sheet. Bake cookies until firm but tender, 15 minutes. Remove to rack, let cool completely.
In small bowl, stir together remaining 1 cup confectioners' sugar and enough milk until smooth but still thick. (May need more) Place some of the remaining coconut into a bowl with a few drops of food dye. Massage coconut until consistent color. Dip cookies into glaze and then sprinkle with dyed coconut. Repeat process with each cookie creating different colors if desired. Serve with milk and enjoy!
