Berry American Shortcake

You can’t celebrate the 4th of July without berry cake or berry pie. That’s a fact. Not only are berries the sweetest during summer, they’re also naturally red and blue. So there’s absolutely no getting around it. You will eat berries on Independence Day. Last year I made this delicious mixed berry pie so this year I made berry shortcake.

This is a much cakier shortcake then you might be used to. Usually shortcake served in this fashion with loose berries and whipped cream on top is crumbly and dense, like a scone. This is really a cake. Had my layer risen more substantially, I would have cut it in half and frosted it as such. But since my layer was stubborn, I decided to serve the shortcake like this, and it was delicious as ever! What berry treats are you bakin’ this week?


  • 1-1/2 cup Flour
  • 3 Tablespoons Cornstarch
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 9 Tablespoons Unsalted Butter, Softened
  • 1-1/2 cup Sugar
  • 3 whole Large Eggs
  • 1/2 cup Sour Cream, Room Temperature
  • 1 teaspoon Vanilla
  • 2 16oz pkg Strawberries
  • 1 12oz pkg Blueberries

for the whipped cream

  • 3 cups heavy or whipping cream
  • 5 Tbs. granulated sugar
  • 1-1/2 tsp. vanilla extract


Preheat oven to 350 degrees. Grease and flour an 8-inch cake pan that is at least 2 inches deep. Sift together flour, salt, baking soda, and corn starch. Cream butter and sugar until light and fluffy. Add eggs one at a time, mixing after each addition. Add sour cream and vanilla and mix until combined. Add sifted dry ingredients and mix on low speed until just barely combined. Pour into cake pan. Bake at 350 degrees for 45 to 50 minutes. Immediately remove from cake pan and place on a cooling rack. Cool completely. Stem and slice strawberries. Make whipped cream by combining all ingredients in a bowl and mixing on high speed until light and fluffy. Cut cake slices and garnish with strawberries and whipped cream. Serve and enjoy! (Original)
